Running is my therapy!

I love running.

When I was growing up, I played softball but would never consider myself an athletic person. When I went to college, I never did much exercise, besides walking around campus and such. I never gain the dreaded “freshmen 15”, in fact I lost 10 pounds the first year.

Then my school finished building their new gym and what a beauty it was. I went to Longwood University, which is in Farmville, Virginia. Not this Farmville, but this Farmville. As you can see, very small town. So when the new gym was finished, it was a big deal! At this point I had gained those 10 pounds back plus a little more, due to lack of exercise and a poor diet. I started going to the gym, my junior year, just to check out the new digs. I kept going because I was noticing how bad of shape I was in.

When I graduated this past May, I didn’t have a gym membership in the town where I’m currently living and didn’t really like the idea of paying to exercise. Then randomly one day, I decided to go running. And, they say, the rest is history.

I usually run 4-5 miles per day. I have signed up for my first race. (November 12!) I have even gotten some of my co-workers in on the running bug.

Why I love Running..

1. It’s my me-time- I still live with the ‘rents (it’s cheaper that way) so I have very little alone time.

2. Great time to think- It’s amazing what you think about while running!

3. Comradery- Us runners know it, whenever you see a fellow runner, we nod at each other or maybe even have a little conversation with each other. It’s like we are already friends.

4. Great views- I love running in Richmond, Virginia! Belle Isle, Brown’s Island, Bryan Park etc. Running here is amazing!

5. Exercise- See where this ends up on my list. I first started running a cheap, free exercise. Now I do it more for the reasons above.

Monday isn’t all bad..

Most people hate Mondays.

See…they even have coffee mugs devoted to the hatred.

I am part of the minority. I, in fact, love Mondays…well parts of Mondays.

I love getting back into the groove of things that the weekend have put a damper on. I actually like going to work and talking with my co-workers about their weekend and such.

The thing I hate about Mondays are, very little time to cook. I find it very hard to cook a big elaborate dinner when I come home from work. This is especially true now that it is getting darker sooner. When I get off at 5pm, I rush home and grab a quick bite to eat before I go for a run. I have to go earlier now because it gets dark around 7. During the summer, this is usually when I’m heading out for the daily run. It’s a major bummer too.

I love trying new recipes but, I can’t run on an empty stomach. Believe me, I’ve tried and my time suffers. Big time! Also, I’m usually starving at 5 anyway.

I’m hoping to find a happy medium by eating a snack later in the afternoon, hopefully that will hold me until after the run.

In other news, I fixed Tofu for the first time! I used Emily’s (www.thefrontburnerblog.com) tutorial for fixing the tofu…and success! It worked perfectly. I was worried because it was my first time fixing it and I’ve had some bad tofu before and I was hoping it wouldn’t turn out like that.

I fixed it very basicly, little olive oil and some salt and pepper. It was amazing. It had a nice crunchy outside will the inside was silking! I tried to get the ‘rents to eat it. My mom tried it( I’m so proud of her!) but she didn’t like it. My dad wouldn’t even try it.

Let’s just say my parents do not share my taste for unique/ethnic food. They usually turn their nose up at it but, like this time, my mom will be “brave” and give it a try. This is how she found out how wonderful Greek food can be!

Why hello there..

I love food.

I know what you’re thinking..oh geez, who doesn’t.

I love reading food magazines, 95% of my bookmarks are recipes and the majority of my time online is spent reading food blogs.

It’s sad I know.

This blog will, in time, will be a place where I will be able to talk about food. I will also try new recipes and post reviews about them.

I will also be posting about health related articles. I am also a bit of a health nut too.
